सर्व प्रथम दलिये को धीमी आंच मे एक कड़ाई मे 5 मिनट के लिए भून लें। अब कुकर
मे तेल या घी डाल दें। गरम होने पर जीरा व हींग डाल दें। अब इसमे प्याज डालकर अच्छे से भून लें। फिर सभी
सब्जियां व हरी मिर्च डालकर 1-2 मिनट भून लें। अब टमाटर डालकर 1 मिनट भून लें। हल्दी, नमक व अदरक का
पेस्ट भी डाल दें। फिर दलिया डालकर 1 मिनट और भून लें। अब 4 कप पानी डाल दें और इसे 10 मिनट मध्यम आंच
मे पकने दें। दो सीटी आ जाने पर गैस बंद कर दें। ठंडा होने पर धनिया और घी डालकर परोसें।
दलिया थोड़ा गीला रहना चाहिए, एकदम ठोस नहीं। दलिया बनते ही गरम गरम खाना चाहिए। ठंडी दलिया अच्छी नहीं लगती है।
Firstly, roast the cracked barley in a heavy pot on low heat for 5 minutes. Now put oil or ghee in the cooker. When oil / ghee is bit hot, add cumin and asafoetida. Now add onion and sauté it well. Then add all the vegetables and green chillies and stir fry for 1or 2 minutes. Now add tomatoes and stir fry for another 1 minute. Add turmeric, salt and ginger paste as well. Then add the roasted broken barley and stir fry for 1 more minute. Now add 4 cups of water and let it cook on medium heat for 10 minutes in the cooker. Turn off the gas after two whistles. Serve with chopped coriander leaves and ghee once cooker cools down. Eat it hot. It should not be very solid.
The jowar/barley should be a little wet, not very solid. Hot food as soon as jowar/barley is made You need it. Cold jowar/barley doesn't look good It is.
